Dole Whip Cupcakes

Get tropical and join Natty as she creates a confectionery take on that classic Adventureland treat, the Dole Whip!


  • 1 2/3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2  cup unsalted butter
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 eggs (at room temperature)
  • 1 8-oz can crushed pineapple (save juice for frosting)
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • Pineapple juice
  • Yellow food coloring (optional)
  1. Combine flour, salt, and baking powder and and set aside
  2. In a separate bowl, beat butter until creamy
  3. Add brown sugar and granulated sugar, blend until smooth (about 3 minutes with an electric mixer)
  4. Add vanilla and slowly beat in eggs, one at a time, combining with rubber spatula
  5. Add drained crushed pineapples (save the juice for the frosting!)
  6. Bake at 350 degrees for 18-20 minutes or until a toothpick comes out clean
  1. Combine two cups powdered sugar, vanilla, and pineapple juice until smooth
  2. Slowly add remaining powdered sugar and combine until fluffy
  3. If desired, add yellow food coloring for that pineapple look!
Putting it all together:
  1. Frost cooled cupcakes with a star tip
  2. Have some fun and add yellow sprinkles, pineapple wedges, or even Minnie Mouse straws like Natty!
  3. Enjoy!
