Dole Whip Cupcakes
Get tropical and join Natty as she creates a confectionery take on that classic Adventureland treat, the Dole Whip!
Recipe:
Ingredients:
Batter:
- 1 2/3 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 tsp vanilla
- 2 eggs (at room temperature)
- 1 8-oz can crushed pineapple (save juice for frosting)
Frosting
- 4 cups powdered sugar
- 1 tsp vanilla
- Pineapple juice
- Yellow food coloring (optional)
Preparation:
Batter:
- Combine flour, salt, and baking powder and and set aside
- In a separate bowl, beat butter until creamy
- Add brown sugar and granulated sugar, blend until smooth (about 3 minutes with an electric mixer)
- Add vanilla and slowly beat in eggs, one at a time, combining with rubber spatula
- Add drained crushed pineapples (save the juice for the frosting!)
- Bake at 350 degrees for 18-20 minutes or until a toothpick comes out clean
Frosting:
- Combine two cups powdered sugar, vanilla, and pineapple juice until smooth
- Slowly add remaining powdered sugar and combine until fluffy
- If desired, add yellow food coloring for that pineapple look!
Putting it all together:
- Frost cooled cupcakes with a star tip
- Have some fun and add yellow sprinkles, pineapple wedges, or even Minnie Mouse straws like Natty!
- Enjoy!
