Pumpkin Spice Mickey Cupcakes

Cupcake Ingredients

  • 1/4 C unsalted butter softened
  • 1/4 C light brown sugar
  • 1/4 C granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 C unsweetened cocoa powder
  • 3/4 C all purpose flour
  • 1/2 C pumpkin puree
  • Chocolate chips (as little or as many as you like!)

Frosting Ingredients


  • Preheat oven to 350°F. Line a muffin pan with 12 paper liners.
  • In a large bowl or stand mixer, cream together butter and sugars until light and fluffy. Beat in egg and vanilla, scraping the bowl as needed. Mix in baking soda, baking powder, salt, and spices. Mix in flour and cocoa powder, followed by pumpkin puree, and finally the chocolate chips. Continue mixing until fully combined.
  • Divide mixture between 12 paper liners
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in pan until easy to handle, then transfer to a wire rack to cool completely.

Frosting Instructions

  • Beat softened butter and cream cheese until well blended.
  • Add powdered sugar and vanilla. Beat until creamy.
  • Add a few drops of orange food coloring and mix well.


  • Frost cupcakes as desired, using your favorite decorating tips.
  • Top with your favorite Halloween candies. We used Reese’s pieces, Reese’s peanut butter cups and pumpkins, candy corn and pumpkins (the candy pumpkins are great for making clever Hidden Mickeys!), sprinkles, and striped straws.
