“The Child”
Mint Chocolate Chip Cupcakes
Ingredients
Batter
- 2 cups (12 ounces) semi sweet chocolate chips
- 3/4 cup (1 1/2 sticks) butter
- 1 1/2 cups granulated sugar
- 3 eggs
- 1 1/2 teaspoons Pure Vanilla Extract
- 1/2 teaspoon mint extract
- 2 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups water
Frosting
- 1/2 cup solid vegetable shortening
- 1/2 cup (1 stick) room temperature unsalted butter
- 4 cups sifted powdered sugar (confectioners’ sugar)
- 3-4 tablespoons milk
- 1 teaspoon vanilla extract
- 2 teaspoons peppermint extract
Add green food color a few drops at a time until you achieve the perfect color.
Cupcake Preparation:
- Preheat oven to 350°F.
- Melt 1 cup chocolate chips and butter together either in microwave oven or on top of range over low heat.
- Stir until chocolate is completely melted.
- Pour into electric mixer bowl.
- Add sugar; beat until well blended.
- Beat in eggs, one at time.
- Add vanilla.
- Stir in 1/2 cup flour, baking soda and salt; mix well.
- Add remaining flour and water; mix until smooth.
- Fold remaining cup of chocolate chips into batter.
- Pour into prepared muffin cups in pan.
- Bake 20-25 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan. Remove and cool completely before decorating.
Frosting Preparation:
- Beat shortening and butter together then slowly add the sugar a cup at a time and mix.
- When all the sugar is mixed in add the vanilla and the milk and mix.
- If more milk is needed just add a tablespoon at a time. (If making mint buttercream frosting, add peppermint oil too!)
- Frost the cupcakes as desired
Note: for plain vanilla frosting, simply omit the peppermint extract and green food coloring. For chocolate frosting, omit peppermint extract and food coloring and add 2/3 cup cocoa powder.
Decorate with green mint frosting 🧁 and topping with mint chocolate Oreos, junior mints, chocolate chips, and of course The Child cupcake topper (please see below for the design we used, which you can print off for free! Print on matte photo paper for best results!). You can also use any decor you would like too (we would love to see the results)!
